Weightloss and the Struggle

Struggling with weight loss is a common thing. We all want to look like that mannequin in the window, but reality is we never will. I have learned that feeling good and living healthy is half the battle. Pure Med Spa gave me that opportunity. I can finally lose weight to look better, I can learn what I should be putting in my body to feel better and overall that's what HA2CG has been doing for me. I am not where I want to be, but making that first step and being able to share with others has been a joy. I have found that I have a gift, a gift of cooking healthy and I wanted to share my recipes with you, and I want your feedback: What did you think?, how did you feel?, and what recipes do you have for me? This is the place for us to be comfortable and move forward in this Journey together.

Cauliflower Pizza!!!

Cauliflower Chicken and Spinach Pizza!!!


                                                    MY NEW FAVORITE DINNER!!!

         So this recipe takes a little bit more work but, when your craving pizza it is AMAZING! 

                        YOU WILL NEED A GRATER TO GRATE THE CAULIFLOWER!!!
                     AND PARCHMENT PAPER, BECAUSE CRUST WILL STICK TO PAN

You will need: 

Cauliflower
A tomato 
Spinach Leaves 
4.3 OZ. Chicken Breast
An Egg (Whites) 

Minced Garlic 
Chopped Onions
Salt/Pepper
Parsley 
Paprika 
Lemon (Juice)


First lets make the Crust!

PRE HEAT to 400

I used a little less than a cup and half of cauliflower
I used my cheese grater and grated all the cauliflower heads down to a powder like substance
add the white from ONE egg, and mix with a fork vigorously, until it becomes dough like
Line a pizza tray, or cookie sheet with parchment paper and scoop dough and form it into an even flat circle 

 BAKE for about 20 min


                                                                 Making the Sauce

In a blender with puree speed you want to add 1 serving of a tomato (this will be your fruit substitute, since we already used our two cups of veggies) you want to add about 1/4 cup chopped onions, minced garlic and salt/pepper to taste
You will blend until smooth and creamy and you can then spread over crust



                                                              Cooking the Chicken

You want to cut up your 4.3 oz of chicken into smaller portions, (because there is an egg in the crust, we are using slightly less chicken) 
In a non-stick pan, spritz with lemon juice and start to grill the chicken, I sprinkled mine with more minced garlic, paprika and salt/pepper 



                                                                   Assembly

With that 1/4 cup of veggies you have left to use, we use for the top. Now that are crust cooked, and has been spread with tomato sauce, we will now add that 1/4 cup of spinach leaves and then top with the chicken! 



                                              That's it!!! Takes about an hour to do!
