Weightloss and the Struggle

Struggling with weight loss is a common thing. We all want to look like that mannequin in the window, but reality is we never will. I have learned that feeling good and living healthy is half the battle. Pure Med Spa gave me that opportunity. I can finally lose weight to look better, I can learn what I should be putting in my body to feel better and overall that's what HA2CG has been doing for me. I am not where I want to be, but making that first step and being able to share with others has been a joy. I have found that I have a gift, a gift of cooking healthy and I wanted to share my recipes with you, and I want your feedback: What did you think?, how did you feel?, and what recipes do you have for me? This is the place for us to be comfortable and move forward in this Journey together.

Easy shredded chicken wraps

      This was one of the easiest lunch recipes! It was light, crisp and very flavorful!  
 I found a white shredded chicken in water can at the store, it met all the no oil/sugar/ fats and bad stuff requirements; so, I bought a few and for busy days they make the best lunches!

What I used:
 Shredded chicken
Mustard
Salt/pepper
Celery
Pickles
lettuce
Tomatoes

Apples
Cinnamon
 

In a bowl mix 6.5 oz of the canned chicken(drained), just enough mustard to get smooth texture, add salt/pepper to taste, chop up a stalk of celery into small pieces and chop up just about 1\2 a pickle to add flavor.

Spoon mixture into 3-4 lettuce leaves and slice up a few tomatoes and layer on top

For my side, I sliced up 1 serving of an apple, so half, and I sprinkled with cinnamon!



And that was it!!   It was very good and so simple, Enjoy!

Shrimp Creole

                                    The best healthy cajun dinner you can have!!!!

I made here, a shrimp creole over cauliflower rice, with a side of raspberries and a piece of Melba toast!

You will need:
Shrimp
Cajun seasonings
Garlic
Tomatoes
Onions
Cauliflower
Sea salt
Pepper
Approved low fat chicken broth
Melba Toast
Raspberries

In a soup pot on med-low add broth, all seasonings to your liking, dice up tomatoes, chop up onions and let it all cook in the pot, stirring occasionally.

While sauce is cooking, start thawing, peeling, and deveining the shrimp; when done add them all to the pot!

In another pot, start boiling cauliflower heads in water, season the water with salt and let boil/cook until cauliflower becomes soft! When its a softer consistency, drain the water and mash down until rice like. You can then season with additional salt/pepper and garlic.

I made this recipe in bulk amounts to separate later! My scale has a bowl so I measured it out per portion as best as possible and then spooned it over about a cup of cauliflower rice to compensate the veggies in the pot! I then served mine with a side a raspberries and Melba toast, although, you can choose different sides!
